Lemony Salmon and Greens Pasta

Serves 4
Ingredients
4 ounces whole grain pasta, any variety
4 cloves garlic, minced
2 cups broccoli, chopped
2 cups spinach
8 ounces drained canned salmon
1 lemon, juice and zest
1⁄4 cup fresh basil, chopped
1⁄4 cup olive oil
salt, and pepper

Directions
1. Mince garlic and chop broccoli and basil.
2. Cook pasta according to package directions. Reserve 1⁄2 cup of pasta
water.
3. Heat half the oil on medium heat in a large pan and sauté the garlic until
lightly browned, about 2 minutes.
4. Add the broccoli and cook for about 8 minutes until lightly browned and
tender.
5. Add spinach and drained canned salmon to the pan, stir and cook until
spinach wilts, about 2 minutes.
6. Add drained pasta, lemon juice, lemon zest, remaining olive oil, and pasta
water. Season with salt and pepper. Cook everything together for about 2
minutes until heated.
7. Serve pasta and top with chopped basil.
