English Muffin French Toast

(Makes 6 servings  )

Ingredients:

 

1/2 cup milk

2 large eggs

1 1/2 tablespoons granulated sugar

1 teaspoon vanilla extract

3 whole grain English muffins, halved

1 tablespoon vegetable oil or butter

Instructions:

In a shallow bowl, whisk the milk, eggs, sugar, and vanilla. Add English muffin halves to the mixture one at a time, flipping a few times, until soaked. Heat oil or butter in a large nonstick skillet over medium heat. Once hot, add muffin halves to the pan. Cook on one side for a few minutes, flip, and continue cooking until the muffins are golden brown on both sides. Continue until all of the muffin halves are cooked. Serve warm with berries and maple syrup, if desired.
