Cauliflower Parmesan

Ingredients

 

  • 1/2 cup Grated Cheese Parmesan if available
  • 1 large head cauliflower
  • 2 cups flour
  • 2 eggs
  • 1 cup milk
  • 1 box Italian-seasoned breadcrumbs Optionally make your own using stale bread!
  • 32 oz. jar tomato sauce
  • 1 cup olive oil
  • Salt and pepper to taste

Instructions

  • Cut off the base of the cauliflower head so that it forms a flat surface. Cut away the thick green stems. Stand the head up on the cut end so the floret is facing up. Slice to make 1-inch thick cauliflower steaks.
  • In 3 separate large bowls: add flour to one bowl, in another bowl whisk eggs and milk, and the third bowl should have the breadcrumbs.
  • Dip the cauliflower in the flour, then the egg mixture and then cover in breadcrumbs.
  • Place breaded cauliflower steaks on greased baking sheet.
  • Drizzle oil over the breaded cauliflower, add salt and pepper and bake at 400 F degrees for 25 minutes.
  • Remove cauliflower steak, top with some tomato sauce and fresh mozzarella slices. Return to oven for another 15 -20 minutes.
  • Let rest for a few minutes, sprinkle with Parmesan and serve with a side of pasta or sautéed greens.
