Apple Oatmeal Muffins

Ingredients

 

1 cup rolled oats
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup unsweetened applesauce
1/4 cup vegetable oil
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup finely chopped apples (about one medium apple)

Directions

1. Preheat the oven to 350°F. Line a muffin tin with paper liners or lightly grease.
2. In a large bowl, combine rolled oats, whole wheat flour, baking powder,
baking soda, cinnamon, and salt.
3. In another bowl, mix the applesauce, oil, honey or maple syrup, egg, and
vanilla extract until well combined.
4. Pour the wet ingredients into the dry ingredients and stir until just
combined. Gently fold in the chopped apples.
5. Spoon batter into prepared muffin tin, filling each cup about 3/4 full.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a

7. Let the muffins cool in the tin for a few minutes before transferring to a wire
rack to cool completely.
