Watermelon Cucumber Salad

Serve this refreshing salad as a side dish with summer meals. Try chilling this salad in the refrigerator for 2 hours before serving to help the flavors come together. If you don’t have balsamic vinegar, try the juice of 1 lime or lemon. If you use tofu instead of feta cheese, you may want to season with a little salt.

Serves 6

Ingredients

4 cups watermelon*, cubed 

2 cups cucumber*, cubed 

1/2 cup red onion*, sliced 

1/4 cup basil, chopped

2 tablespoons olive oil

1/2 cup balsamic vinegar 

2 ounces feta cheese or tofu*, cubed 

 

Instructions

Mix together watermelon, cucumber, red onion and basil in a large bowl.

Mix together olive oil and balsamic vinegar in a small bowl and pour over the watermelon mixture.

Top with feta cheese or tofu.
