Peanut Butter Granola Bars

 

Ingredients

 

1⁄2 teaspoon salt
1 teaspoon cinnamon
2 cups quick oats
2 1⁄2 cups crisped rice cereal
1 cup smooth peanut butter
1⁄2 cup honey or maple syrup
1⁄4 cup mini chocolate chips (optional)
Cooking spray

Directions

1. Combine peanut butter, honey or maple syrup, salt, and cinnamon in a
small pot.
2. Cook on low heat and stir with a spoon until combined and smooth.
Remove from the heat and let cool slightly.
3. In a large mixing bowl, combine oats and crisped rice cereal.
4. Add the peanut butter mixture to the bowl with the dry cereal and mix until
well combined.
5. Spray a 9″ x 13” dish with cooking spray and pour the mixture into it.
6. Press the mixture evenly across the entire pan and use your hands or a
spatula to press it down tightly.
7. Sprinkle the chocolate chips, if using, over the top and press down lightly.
8. Cover with plastic wrap or foil and refrigerate for several hours or until firm.
9. Cut into approximately 30 bars. Store in the refrigerator.
