Easy Corn & Cucumber Salad

Enjoy this salad as an side dish with meals.

Serves 7

 

Ingredients

1 cup cucumber* (chopped, with peel)

1 cup corn* (fresh cooked, frozen, or canned and drained)

1 cup tomatoes* (chopped)

1/8 cup red pepper* (chopped)

1/8 cup green pepper* (chopped)

2 tablespoons red wine or apple cider vinegar

1/2 teaspoon garlic powder, or 2 cloves garlic* (minced)

1/2 teaspoon cumin (ground)

1/4 teaspoon cilantro (dried), or 1 tablespoon fresh cilantro (finely chopped)

1/4 teaspoon salt

1/8 teaspoon ground black pepper

Instructions

Combine ingredients and mix well.

Serve cold.
