Creamy Spinach & Artichoke Pasta

Makes 8 servings

Ingredients

1 pound whole wheat pasta (cooked, drained)

2 tablespoons olive oil (or vegetable oil)

1⁄2 onion (medium, sliced)

14 ounces artichoke hearts (canned, drained, rinsed, and chopped)

2 cups fresh spinach, rinsed

2 cloves garlic (chopped)

1 cup low-fat or nonfat milk

1⁄2 cup plain low-fat or non-fat yogurt

2 tablespoons low-fat or nonfat cream cheese

parmesan cheese (shredded, to taste)

salt and pepper to taste

 

Directions

In a large pan, heat oil over medium heat. Add the onions and cook for 1-2

minutes or until starting to soften.

Add the garlic and spinach and cook for 1-2 minutes.

Add the artichoke hearts and cook until heated through.

Turn the heat to low and add the remaining ingredients, except for the

parmesan, stirring to combine. Once the sauce is combined, add the cooked

Pasta.

Stir to coat the pasta. If the sauce is thin, let it cook on low for about 5 minutes,

or until thickened.

Top with parmesan and enjoy!
