Not being in Vermont, we can’t officially call it local but Meriden, NH is mighty close and we love that. We also love that this ricotta is special not only because it is made from the milk of just six award winning Guernsey cows who are much loved by their humans, but because as the makers say, “Our ricotta will make your pasta, pizzas, & baked goods soooo much better!” Elizabeth loves it because it has more body and less moisture than most ricottas and says that it is perfect for stuffing shells or layering in lasagna as well as dolloped on fruit or grilled veggies. If you are gluten free you are in luck because Elizabeth has put samples on Onesto GF crackers, which will go on sale in May. Se ya at the cheese case!
