Happy FREE cheese sample Thursday! Earlier today, our featured cheese, Bleu D’Elizabeth, actually transported our Elizabeth to the sky blue heavens! Luckily she came back to put out more of this special farmstead cheese from Quebec. She says, “For those of you who who’d like a reminder about how sumptuous, salty, superb this cheese is…toast some walnuts in a skillet and pour a glass of Cinsault.”
The maker, Fromagerie Du Presbytère, https://www.fromageriedupresbytere.com/ describes it like this….Bleu d’Élizabeth is a semi-soft cheese made from thermalized cows milk with interior mould. Its natural rind is strewn with ochre-coloured spots and contains beautiful blue and sometimes greenish-coloured veins resulting from the presence of Penicillium Roqueforti. The unique taste and perfect salt balance of this cheese is sure to please the most discriminating palate!
