Happy free cheese sample Thursday! Here is a chance to try something new and delicious, Ricotta Salata. This sheep’s milk cheese is imported from Sardinia, Italy and is astonishingly affordable. This versatile, light specialty is unlike ricotta. “Salata” mean’s salted. It is then pressed and dried, so it is firm yet tender and snowy white and beautiful. It is great in pasta dishes, over veggies and in salads. Our cheesemonger, Elizabeth says that it tastes wonderful in tomato soup and pairs well with citrus, especially oranges.
