Happy free cheese sample Thursday! Today Elizabeth offers a local delicious creation from Stony Pond Farm in Fairfield, VT called Swallow Tail. Made by Melanie, in small batches with milk still warm from our adorable Jersey cows, this creamy, buttery cheese aims to capture the unique flavors of our pastures. Elizabeth adds that Stony Brook treats their Jersey cows so very well and that it shows in their products. The farm uses intensive rotational grazing that gives their cows new pasture every 12 hours, which we are sure contributes to the “grassy butteriness” of Swallow Tail. “Who wants to cook in this heat? So good on a cheeseboard! Pair with a frosty IPA or a chilled sauvignon blanc”… and find heaven!
